The kit is used to quantify the Soy trypsin inhibitors (STI) in cookies, cereals, ice cream, chocolate, instant soups and sausage. This assay has high sensitivity and excellent specificity for detection of Soy trypsin inhibitors (STI). No significant cross-reactivity or interference between Soy trypsin inhibitors (STI) and analogues was observed.
